Virginia Pils

Lightly modified and cured at low temperatures to unveil the terroir of Virginia by way of earthy flavor attributes (straw, dry grass, mineral). Low in color to provide a very light, clear, crisp wort. Great for European-style lager brewing

Carolina Gold

Pale Malt offering the utility and balance of American 2-row brewers malt. Well-modified and moderately kilned to control color and maximize brew house performance. A great choice for IPA, pale ale, American-style lager, and all-malt distilling.

Grown in the mineral-rich Blacklands soil of Pamlico County, NC, Seashore Black Rye delivers a licorice & dried fruit-forward flavor profile with natural sweetness and coffee-like richness honed by centuries of harsh coastal conditions.

Carolina Pilsner

Kilned at cure temperatures slightly lower than Virginia Pils to display a light straw color, clean taste, and high conversion potential that lends well to both lagers and ales.

English Pale

Well-modified pale ale malt kilned to slightly higher temps at the end of curing to release the slightest bit of nutty sweetness (Grape Nuts®, saltines, sunflower seed, honeysuckle) and unlock hints of pretzel and pizza crust. Also a great choice for distillers.

Red Wheat Malt

With slightly higher protein than white wheat, Soft Red Wheat carries a pale color and a malty-sweet flavor with gentle tones of honey and walnuts. It's high protein brings a creamy mouthfeel and improved head formation/retention, producing a fuller-bodied beer.

Chit Malt

A head retention powerhouse originally conceptualized by German brewers to circumvent the Reinheitsgebot's prohibition of raw grain. Germinated only briefly to preserve foam-friendly protein and pentosans typically broken down during full-modification malting, Chit malt is a more effective alternative to dextrin malt.

This 100% NC-grown #2 yellow Dent corn is a more flavorful, turnkey substitution for flaked maize, bringing a sweet, slightly savory corn flavor, reminiscent of corn pudding.

Dating back to 1685, this heirloom rice of the Carolinas boasts a rich, nutty flavor. Once milled, it does not require a cereal mash and will contribute a crisp, dry finish to lagers.

Old-Fashioned Style (thicker cut) buckeye oats from Quaker Oats. A favorite for Hazy IPA, rolled oats add body, haze, softness, or silkiness to any style, including Pale Ale and Stout.

Buena Vista Yellow

LIMITED TIME: An open-pollinated heirloom dent corn grown by R.P. Hart & Son in Virginia's coastal plain. Hand-selected from a multi-color landrace variety, this predominately yellow corn is speckled with red and pink kernels. Flavors of Corn Flakes®, sunflower seed, and dry grass make it great for American lager, cream ale, and Common.

Malted Oats

Hulled Gerard 224 Oats undergo our proprietary germination and kilning schedule, resulting in a beautifully bright, plump oat malt that lends subtle flavors of breakfast cereal, oatmeal cookie, and hints of vanilla. Post milling, the hulls provide additional filtering medium for clean, efficient lautering much like rice hulls.

Bavarian Series

Bavarian Series

Our Bavarian Series is designed to inspire a brewer’s creativity to craft compelling and distinctive beers leveraging malt-forward flavors.

Vienna

Graham cracker sweet but still light in color, this malt is produced to encourage maillard-derived melanoidin development (biscuit, biscotti, honey). It is cured at moderate temperatures to preserve enzymatic activity and achieve it's characteristic golden wort color. Perfect as a base for malt-forward ales & lagers, or for adding flavor and depth to lighter styles.

Dark Munich

Cured at higher kiln temps than Light Munich, and for longer, adding intense maltiness and rustic flavors of toffee, toasted bread, and malty sweetness. This specialty malt adds color, depth, and dimension to styles such as amber lager (Oktoberfests), Schwarzbier, Dunkel, altbier, bock, porter, and stout at just 5-10% of grist. A worthy equivalent to M&R's former Munich 15.

CaraMel Dark

LIMITED TIME: A kiln-roasted hybrid caramel-melanoidin malt straddling mid-color crystal and dark Munich malts. Flavors of whole-grain cracker, rustic bread crust, brown sugar, and candied fruit.

Light Munich

Slightly over-modified during germination, stewed, and then cured at higher kiln temps than Vienna to boost color and malty flavor intensity. Light Munich is just enzymatic enough to be the backbone of any malt-forward beer but also robust enough to play backup, adding body at just 10-15% of grist. It imparts a vibrant amber color and strong notes of freshly baked bread and wild honey. A great equivalent to M&R's former Munich 9.

Dry Roasts

Roasted malts contribute a wide range of flavors and aromas to beers and spirits—including caramel, toffee, charred sugar, nutty, biscuit, chocolate, and coffee, with hues ranging from golden straw to caramel red to deep brown.

Biscuit

A fantastic malt for adding body, smoothing out competing dark malt flavors, or delivering buttery or baked dough sensory attributes mid-palate. Biscuit malt is also a great selection when seeking additional body for sessionable beers without adding significant color.

Built upon a higher kilned base malt to deliver exponentially more depth than a traditional Amber malt. Chocolate Wheat

Packing all of the roastiness of our barley-based Americano Roast, this malt contributes a nitro-like velvety foam and silky mouthfeel to any mid-to-dark beer. A great choice for Black IPA, Porter, Stout, or any recipe where a smoother finish is desired.

Cimmerian Line

Our line of black malts offers the smooth character of naturally-debittered wheat. The range of colors provide options to serve any beer styles ranging from amber to black.

Cimmerian Wheat

Naturally debittered black malt that delivers a slightly lighter color than Cimmerian Black with the added silkiness and head retention of malted wheat. RIYL: Carafa Special® II or Midnight Wheat® malts
